Just a note to let you know that I successfully prepared Hal Walter's tostadas [in the February, 2002, edition] the other night. They were great and are a hit with the whole family. Thanks for including them in your Colorado Central column. I used the run of the mill chile powder instead of the Chimayo. I will order some from the Santa Fé cooking school before I make the next batch.
